Eat them

SOMETIMES, SIMPLE IS best. Freshly picked French beans need little more than a decent dressing to make them shine. This one takes just minutes to prepare.

French beans with lemon and garlic

Serves 4 as a side dish

• 350g French beans

• 1 tablespoon lemon juice

• 1 tablespoon finely grated lemon zest

• 3 tablespoons olive oil

• 1 clove of garlic, crushed

• Salt and pepper

Method

• Make the dressing by putting the lemon zest and juice, olive oil, garlic and seasoning in a jar. Put the lid on tightly and give it all a good shake.

• Bring a pan of salted water to the boil. Drop the beans into the water and cook for 2 or 3 minutes. They should turn bright green, but retain some crunch.

• Transfer the beans to a bowl and pour the dressing over while they are still warm.
